Fruit-Filled Breakfasts

When I think of breakfast, I think of thick bacon and scrambled eggs.  Heavy pancakes and crispy sausage.  Paper-thin crepes laden with nutella and strawberries.

My reality is far less caloric. The 8AM version of myself is crabby with bad hair and blind eyes.  The very thought of washing a pan before noon makes my blood run cold.  Cooked breakfasts are reserved for weekends when I reserve the right to use “I cooked, you clean” rules.

Instead, I like to reach for simple dishes that come together in one place.  I’ll reach for peanut butter oats on my indulgent days, but when I’m trying to feel fresh, I like to keep the following on hand:

  • Bananas
  • 1-2 types of berries
  • Apples
  • Hard boiled eggs
  • Natural crunchy peanut butter (no sugar added)

English muffins are also a great addition.

I highly suggest grouping all of these fruits at eye level in your fridge.  That way you can grab everything in one swipe, and you will also be able to reduce waste.  I prefer to eat all of my fruit whole.  It’s more satisfying that a smoothie or juice.  So many bites = so much love.
